Explore the AcademyWho these recipes are for
If you have a starter on the counter, or you want one, this collection is your path. It runs from a first foolproof boule all the way to einkorn, marble rye, and sourdough bagels, and every recipe assumes the same things: you have a kitchen scale, you have some patience, and you want to understand what the dough is doing instead of just following steps and hoping.
Start with the Foolproof Sourdough Loaf if you're new. It's built with wider timing windows than most sourdough recipes, so a bulk ferment that runs long during dinner doesn't sink the bake. Once that loaf is consistent, the Country Sourdough and the whole wheat builds teach you how flour choices change hydration and timing. The specialty bakes, the babkas and pretzel loaves and bagels, are there when the fundamentals feel boring.
What you need
A digital kitchen scale is not optional for sourdough. Volume measurements drift too much when hydration is the whole game. Beyond the scale: a Dutch oven or a baking stone with a steam pan, a bench scraper, a banneton or a bowl with a floured towel, and something sharp to score with. A lame is nice, a razor blade works, a very sharp knife will do.
Temperature control matters more than gadgets. If your kitchen runs cold, your ferments run long. A proofing box like the SourHouse Goldie solves it, but so does the oven with just the light on. Every recipe here gives you the dough temperature to aim for, not just clock times.
The two mistakes that ruin most sourdough
First: baking with a starter that isn't ready. A starter that doubles reliably within six to eight hours of feeding is ready. One that rises a little and stalls is not, and no recipe can rescue it. Feed it on schedule for a few days before bake day and the whole process gets easier.
Second: watching the clock instead of the dough. Bulk fermentation is done when the dough is done, not when the timer says so. Look for a domed surface, visible bubbles at the edges, and a jiggle when you shake the bowl. Every recipe in this collection describes what the dough should look and feel like at each phase for exactly this reason.
Frequently asked questions
- How do I know when my starter is strong enough to bake with?
- Feed it, then watch. If it doubles within six to eight hours and smells pleasantly tangy, it's ready. If it takes longer, keep feeding on a regular schedule at room temperature for a few more days. The float test is less reliable than the doubling test.
- Can I bake sourdough without a Dutch oven?
- Yes. A baking stone or heavy sheet pan plus a pan of hot water on the rack below gives you the steam a crackling crust needs. The Dutch oven just traps that steam automatically, which is why beginners find it more forgiving.
- Why is my crumb dense at the bottom?
- Usually underfermentation, sometimes underproofing after shaping. Push bulk ferment until the dough is genuinely airy, and give the shaped loaf its full final proof. A cold kitchen can double the times printed in any recipe.
- Where should I start if I have never baked sourdough?
- The Sourdough Starter From Scratch guide first if you need a starter, then the Foolproof Sourdough Loaf. Those two teach every skill the rest of the collection builds on.
