Whole-Grain Spelt Aroma Loaf

Ingredients
Aroma Dough
Prepare 10-12 hours before the final mix.
- 65g (1/2 cup + 2 tsp) fresh-milled whole-grain spelt flour — Mill fine.
- 65g (1/4 cup + 1 tsp) water
- 0.2g (1/16 tsp) instant yeast — A very small pinch.
Spelt Sourdough
Prepare the night before.
- 65g (1/2 cup + 2 tsp) fresh-milled whole-grain spelt flour
- 65g (1/4 cup + 1 tsp) water
- 13g (2 1/2 tsp) active sourdough starter — Use an active, healthy starter.
Salted Kochstück
Prepare the night before and refrigerate after cooling.
- 70g (1/2 cup + 1 tbsp + 1 tsp) fresh-milled whole-grain spelt flour
- 210g (3/4 cup + 2 tbsp + 1/2 tsp) boiling water — Use immediately after boiling.
- 9g (1 1/2 tsp) fine sea salt
Final Dough
Combine the three overnight builds with the remaining flour and water.
- 130.2g (all) prepared aroma dough — Use the entire aroma dough.
- 143g (all) prepared spelt sourdough — Use the entire sourdough build.
- 289g (all) prepared salted Kochstück — Use the entire Kochstück.
- 250g (2 cups + 1 tbsp + 1 tsp) fresh-milled whole-grain spelt flour
- 30g (2 tbsp) water
- 55g (1/3 cup + 1 tbsp) sunflower seeds — Shelled.
- 20g (2 tbsp + 1/2 tsp) sesame seeds — Reserve a small portion for the top if desired.
Total flour: 450g
Hydration: 82.2%
Pro tip: This dough will look more like drywall spackle than conventional bread dough. Don't add flour trying to make it behave like a regular dough.

Method
Mill the Spelt (Before beginning)
For the fresh-milled version, mill at least 450g of spelt berries into fine fresh milled flour. Weigh the flour after milling and divide it among the three builds and final dough.
- Mill the grain. Mill the spelt berries as finely as your mill allows. You need 450g total whole-grain spelt flour for the formula.
Tip: Measure the recipe by flour weight after milling.
Prepare the Aroma Dough (Night before)
The aroma dough develops gentle fermentation flavor before the final mix.
- Mix the aroma dough. Stir the spelt flour, water, and instant yeast together until no dry flour remains. Cover.
- Ferment overnight. Cover and leave at room temperature for 10-12 hours. It should look loose, fermented, and aromatic by morning.

Prepare the Spelt Sourdough (Night before)
This build brings sourdough starter acidity, flavor, and fermentation into the loaf.
- Mix the sourdough. Combine the spelt flour, water, and active starter until evenly mixed. Cover.
- Let it mature. Ferment for 8-12 hours. Look for visible aeration, expansion, and a clean fermented aroma.

Prepare the Salted Kochstück (Night before)
The Kochstück gelatinizes starch and binds a large amount of water inside the loaf.
- Combine flour and salt. Place the spelt flour and salt in a heatproof bowl.
- Add boiling water. Pour the boiling water over the flour and salt and whisk immediately until thick, smooth, and fully combined.
- Cool and refrigerate. Cover the surface, let it cool, then refrigerate overnight.
Mix the Final Dough
This is an unusually soft dough. At roughly 82% hydration, whole-grain spelt plus the Kochstück creates something closer to a thick batter than a conventional bread dough.
- Combine the builds. Add all of the aroma dough, spelt sourdough, Kochstück, remaining spelt flour, and water to the mixer.
- Mix gently. Mix on low for 5-7 minutes. Rest 5 minutes, then mix again only as long as needed for the dough to become smooth and homogeneous.
- Read the dough. Do not expect a conventional dough ball. It will be very soft, sticky, and almost batter-like. Think drywall spackle. Do not add flour trying to stiffen it.
Tip: Spelt can go from developed to overmixed quickly. Stop when the mixture is smooth and cohesive.
Add the Seeds
Seeds go in at the very end so they don't tear the delicate gluten.
- Mix in the seeds. Add the sunflower and sesame seeds during the final minute of mixing. Reserve a little sesame for the top if you like.
Pan and Proof the Loaf
This dough is deposited into the pan rather than traditionally shaped, then given its final proofing.
- Fill the pan. Grease a 9x5-inch loaf pan. Scrape the dough into the pan and smooth the surface with a wet hand or flexible spatula.
- Add the topping. Sprinkle the reserved sesame seeds over the surface if using.
- Final proof. Proof around 78°F (26°C). Watch the dough, not the clock. It is ready when the center has risen about 1/2 to 1 inch above the rim of the pan and forms a soft rounded crown.
Tip: Do not wait for a dramatic doubling. Spelt has a smaller margin between properly proofed and overproofed.
Bake and Cool
Bake until the internal temperature confirms the center is set.
- Bake. Bake at 375°F (190°C). Begin checking at 35 minutes.
- Check doneness. The loaf is done when the center reaches 200-205°F (93-96°C).
- Cool. Remove the loaf from the pan and cool completely on a wire rack before slicing.
Tip: If the crust is browning faster than the center is baking, tent the loaf loosely with foil.
Pan the Loaf
This dough is too soft for conventional shaping.
9x5-inch Pan Loaf (recommended)
Scrape the dough directly into a greased loaf pan and smooth with a wet hand or spatula.
- Fill. Transfer all dough to the prepared pan.
- Smooth. Level and gently dome the surface.
Proof test: The loaf is ready when the center crowns roughly 1/2 to 1 inch above the rim and the surface looks softly rounded.
Bake the Spelt Aroma Loaf
Bake until deeply set through the center but still moist and tender.
Oven: 190°C / 375°F. Internal temperature when done: 93-96°C / 200-205°F.
Standard Loaf Pan (recommended)
The tested home-baker method.
Equipment: 9x5-inch loaf pan
- Preheat. Preheat oven to 375°F (190°C).
- Bake. Bake 35-45 minutes.
- Check Temperature. Remove when the center reaches 200-205°F (93-96°C).
- Cool. Remove from pan and cool completely before slicing.
Note: The crumb should be soft and moist, but not gummy.
Storage
- Room temperature: 3-4 days in a bread bag or well wrapped at room temperature.
- Refrigerated: Not recommended for routine storage because refrigeration speeds staling.
- Frozen: Up to 3 months. Slice before freezing for easy portioning.
Toast individual slices or warm briefly to refresh the crumb.
Frequently Asked Questions
Why does my dough look more like batter than bread dough?
That is expected. The high hydration, whole-grain spelt, and Kochstück produce a very soft mixture. It may remind you of drywall spackle. Do not add flour just to make it look like conventional dough.
How do I know when it has proofed enough?
Look for the center of the loaf to crown roughly 1/2 to 1 inch above the pan rim with a softly rounded surface. Do not wait for it to double.
Why is my crumb gummy?
The loaf may be underbaked or sliced too soon. Bake until the center reaches 200-205°F (93-96°C), then cool completely before cutting.
Can I substitute einkorn or Khorasan wheat for the spelt?
Not as a direct 1-for-1 substitution. This formula was tested with whole-grain spelt. Khorasan would be the first grain to experiment with, but water may need adjustment. Einkorn has much weaker gluten and needs its own hydration and mixing approach.
Can I use purchased whole-grain spelt flour instead of milling it fresh?
Yes. The loaf can be made with whole-grain spelt flour, but fresh-milled flour may absorb water differently. Judge the dough by its texture rather than trying to force it to match a clock or a photograph.
