Who these recipes are for

These are the workhorses: sandwich loaves that slice clean for Monday lunches, dinner rolls for Sunday tables, burger and hot dog buns that don't disintegrate, hoagies, and proper chewy bagels. If your household eats bread daily, this collection replaces the grocery aisle.

Start with the Classic White Sandwich Bread or the Soft Italian. Both are straightforward doughs with tight, even crumbs built for slicing. The bagels are a weekend project with a boiling step, and worth every minute of it.

What you need

Good loaf pans matter here; a heavy 9x5 or 8.5x4.5 pan gives straight sides and an even bake. A scale keeps rolls uniform, and a dough divider or bench scraper speeds that up. For bagels you need a wide pot for boiling and a little barley malt syrup, or honey in a pinch.

The two mistakes that wreck sandwich bread

First: wrong pan size. A 9x5 recipe proofed in an 8x4 pan mushrooms and collapses; the reverse gives a flat, sad loaf. Match the pan or adjust expectations. The recipes here name their pan for exactly this reason.

Second: slicing hot. A sandwich loaf needs to cool fully, an hour or more, before slicing, or the crumb compresses into gumminess and the loaf stales faster. Bake in the evening, slice in the morning, and the loaf behaves.

Frequently asked questions

How do I get sandwich slices that hold together?
A properly kneaded dough, a full final proof, and complete cooling before slicing. A serrated knife or an inexpensive slicing guide keeps thickness even. The tangzhong loaves are the most slice-stable of the collection.
Why do homemade buns go stale so fast?
No preservatives, so plan around it: buns freeze beautifully. Split them first, freeze in a bag, and ten seconds in a toaster brings them back better than day-two counter buns.
Do I really have to boil bagels?
Yes, if you want bagels instead of round bread. The boil gelatinizes the surface, which creates the shine and chew. Sixty seconds per side in water with malt syrup is all it takes.
Can I turn a loaf recipe into rolls?
Almost always. Divide the dough into 80 to 100 gram pieces, shape tight rounds, and drop the bake to roughly 18 to 22 minutes at the same temperature. The recipe pages scale the math for you.
