This is the backbone collection: crusty loaves raised with ordinary yeast, no starter required. If sourdough's schedule doesn't fit your life, or you're brand new and want bakery-style bread this weekend, start here. Baguettes, batards, ciabatta, the Overnight French Bread, and a fast two-hour no-knead loaf all live in this collection.
The Overnight French Bread is the recipe this whole site grew from: mix five minutes tonight, bake tomorrow. If you bake one thing from the Pantry, make it that one. The 2-Hour No-Knead is the same idea in a hurry.
What you need
A scale, a Dutch oven or baking stone, and a bench scraper cover ninety percent of this collection. Instant yeast keeps for months in the freezer, so buy it in bulk, not packets. For baguettes a couche and a transfer board help, but a floured towel and a flipped sheet pan got me through years of bakes.
The two mistakes that flatten yeasted loaves
First: killing or racing the yeast. Water above 115°F kills it; too much yeast races the flavor away and leaves a beery, overproofed dough. These recipes deliberately use less yeast and more time, because time is where flavor comes from.
Second: skipping steam. That deep crackling crust comes from a hot oven and trapped moisture in the first fifteen minutes. Bake inside a covered Dutch oven, or throw ice into a preheated pan on the lower rack. A dry oven gives you a pale, thick rind no matter how good the dough was.
Frequently asked questions
- Active dry or instant yeast?
- These recipes use instant unless stated. Active dry works at a one-to-one swap in these formulas if you dissolve it in the water first; expect proofs to run slightly longer.
- Why does the overnight rest matter if yeast works in an hour?
- Flavor. A long, cool ferment lets enzymes and organic acids develop the wheaty depth you taste in bakery bread. One hour of proofing makes bread; twelve hours makes bread worth eating plain.
- My crust softens as it cools. Did I do something wrong?
- No, moisture migrating out of the crumb always softens the crust a little. To keep more crackle, let the loaf finish with five minutes in the turned-off oven with the door cracked, and never cool it in a closed container.
- Can I halve or double these recipes?
- Yes, every recipe page has baker’s math scaling built in. Bake times shift with loaf size, so trust internal temperature: about 205 to 210°F for lean breads.
