Ingredients

Banana Bread Batter

Bring the bananas, eggs, and sour cream to room temperature before mixing.

  • 260g (about 2⅛ cups fresh-milled flour) soft white wheat berries, milled fine — Weigh the finished flour. Cup volume is an estimate because fresh-milled flour varies.
  • 5g (1 tsp) baking soda
  • 3g (¾ tsp) baking powder
  • 4g (about ⅔ tsp) fine sea salt
  • 2g (1 tsp) ground cinnamon
  • 390g (about 1¾ cups) very ripe bananas, mashed — Use heavily spotted or mostly brown bananas for stronger flavor and natural sweetness.
  • 160g (¾ cup) dark brown sugar, packed
  • 100g (2 large eggs) large eggs, room temperature — About 100g without shells.
  • 75g (⅓ cup) full-fat sour cream, room temperature
  • 113g (½ cup) unsalted butter — Measure before browning.
  • 5g (1 tsp) vanilla extract
  • 60g (about ½ cup) shelled pistachios, lightly toasted and roughly chopped — Use 45g in the batter and reserve 15g for the top.

Optional Finish

Use either or both toppings for the loaf. Turbinado sugar also works well on the jumbo muffins.

  • 15g (about 1 tbsp) turbinado sugar — Optional.
  • 60g (½ medium banana) ripe banana, split lengthwise — Optional loaf topping only. Weight is approximate.

Pro tip: Use the gram weight for the flour. Fresh-milled flour can pack very differently into a cup depending on how fine it is milled and how much it has settled.

Method

Prepare the Ingredients and Pan (Room temperature ingredients matter here)

Start with ripe bananas and ingredients that are close to the same temperature so the batter blends smoothly.

  1. Heat the Oven and Prepare the Pan. Heat the oven to 350°F (175°C). For a loaf, grease or line a 9 x 5-inch loaf pan. For muffins, grease or line 6 Texas-size jumbo muffin wells.
  2. Bring the Cold Ingredients to Room Temperature. Let the eggs and sour cream lose their refrigerator chill before mixing. Cold ingredients can make the browned butter firm up and make the batter harder to combine evenly.
  3. Mill the Soft White Wheat. Mill 260g soft white wheat berries on a fine setting. Stir the flour briefly after milling to redistribute the bran, germ, and fine flour.

Tip: Soft white wheat is lower in protein than hard wheat. That is a good thing here because this loaf needs tenderness, not strong bread-dough gluten.

Brown the Butter and Mix the Dry Ingredients

Brown the butter until nutty and amber, then let it cool while you combine the dry ingredients.

  1. Brown the Butter. Place the butter in a light-colored saucepan over medium heat. Let it melt and foam, stirring or swirling occasionally. When the milk solids turn amber brown and the butter smells deeply nutty, remove it from the heat and immediately pour it into a heatproof bowl. Let it cool until warm, not hot. Do not add water back to replace what cooked off.
  2. Whisk the Dry Ingredients. Whisk the fresh-milled flour, baking soda, baking powder, salt, and cinnamon until the leavening is evenly distributed.

Tip: A light-colored pan lets you see the milk solids. Pull the butter when they are amber and fragrant, before they turn black.

Mix the Banana Batter

Build the wet mixture first, then fold in the flour gently and stop once every dry pocket is gone.

  1. Mix the Bananas and Brown Sugar. Mash the bananas until mostly smooth. A few small pieces are fine. Whisk in the dark brown sugar.
  2. Add the Eggs, Sour Cream, and Vanilla. Whisk in the eggs, sour cream, and vanilla until the mixture is smooth and evenly combined.
  3. Add the Brown Butter. Slowly whisk in the warm browned butter. It should still be fluid, but it should not be hot enough to cook the eggs.
  4. Fold In the Dry Ingredients. Add the dry ingredients to the banana mixture and fold gently with a flexible spatula. Scrape all the way around the bowl and underneath the batter. Fresh-milled flour can clump and hide in small dry pockets. Keep folding only until no dry flour remains, then stop.
  5. Fold In the Pistachios. Fold 45g of the toasted pistachios into the batter. Reserve the remaining 15g for the top.

Tip: The goal is not a perfectly smooth batter. The goal is no hidden dry flour. Once every dry pocket is gone, quit mixing.

Rest the Batter and Fill the Pan

Give the fresh-milled flour a short hydration rest before the batter goes into the oven.

  1. Rest the Batter. Let the finished batter rest for 10 minutes. This gives the fresh-milled flour time to absorb moisture before baking.
  2. For a Loaf. Transfer all of the batter to the prepared 9 x 5-inch loaf pan and smooth the top. Sprinkle with the reserved pistachios and, if using, the turbinado sugar. For the banana-topped version, lay the split banana cut-side up over the batter.
  3. For Jumbo Muffins. Divide the batter evenly among 6 Texas-size jumbo muffin wells. Sprinkle the tops with the reserved pistachios and optional turbinado sugar.

Wait: PT10M

Tip: This is a short rest, not a long soak. Ten minutes is enough for the flour to start taking up moisture.

Bake and Cool

Leave the oven door closed while the center is still building structure, then check near the end of the expected bake.

  1. Bake the Loaf. Bake at 350°F (175°C) for 55-70 minutes. Do not open the oven before about 50-55 minutes. Opening the door too early drops the oven temperature while the center is still fragile and can contribute to a sunken loaf.
  2. Bake the Jumbo Muffins. Bake at 350°F (175°C) for 26-32 minutes. Keep the oven closed for at least the first 24-25 minutes before checking.
  3. Check the Center. The center should register 200-205°F (93-96°C). A tester inserted in the center should come out without wet batter. If the loaf top is getting darker than you want near the end, loosely cover it with foil and finish baking.
  4. Cool the Loaf. Cool the loaf in the pan for 15 minutes, then remove it and transfer it to a wire rack. Let it cool completely before slicing because the crumb continues setting as it cools.
  5. Cool the Muffins. Cool the jumbo muffins in the pan for 10 minutes, then transfer them to a wire rack.

Tip: Color is only part of the story. The center temperature is the better test for a moist quick bread like this.

Bake Until the Center Is Set

Both versions bake at the same temperature. The Texas-size jumbo muffins simply finish sooner.

Oven: 175°C / 350°F. Internal temperature when done: 93-96°C / 200-205°F.

Texas-Size Jumbo Muffins

The same batter makes 6 jumbo muffins.

Equipment: 6-well Texas-size jumbo muffin pan

  1. Preheat. Preheat fully to 350°F (175°C).
  2. Bake. Bake 26-32 minutes.
  3. Keep the Door Closed. Do not open the oven before about 24-25 minutes.
  4. Check. Bake until the centers reach 200-205°F (93-96°C) and a tester shows no wet batter.
  5. Cool. Cool 10 minutes in the pan, then move the muffins to a wire rack.

Note: Do not keep opening the oven to check. Let the loaf or muffins get close to done before you disturb the oven temperature.

Storage

  • Room temperature: Store tightly covered at room temperature for up to 3 days.
  • Refrigerated: Store tightly covered for up to 5 days. Bring to room temperature or warm gently before serving.
  • Frozen: Freeze the cooled loaf, individual slices, or muffins, well wrapped, for up to 3 months.
  • Refresh: Warm slices or muffins in a 300°F (150°C) oven for 6-8 minutes, or serve at room temperature.

Cool completely before wrapping so trapped steam does not make the crumb gummy.
