Ingredients

Cinnamon Apples

Coating the apples lightly with flour helps manage the juice they release in the oven.

  • 200g (about 1½ cups) firm baking apple, peeled and diced — Honeycrisp, Pink Lady, Granny Smith, or Braeburn; dice about ¼ inch.
  • 25g (2 tbsp) light brown sugar
  • 4g (1½ tsp) ground cinnamon
  • 8g (1 tbsp) all-purpose flour
  • 5g (1 tsp) lemon juice

Apple Bread

  • 240g (2 cups) all-purpose flour
  • 5g (1¼ tsp) baking powder
  • 3g (½ tsp) baking soda
  • 4g (¾ tsp) fine salt
  • 4g (1½ tsp) ground cinnamon
  • 0.5g (¼ tsp) ground nutmeg
  • 113g (½ cup) unsalted butter, softened
  • 100g (½ cup packed) light brown sugar
  • 65g (⅓ cup) granulated sugar
  • 100g (2 large eggs) large eggs — About 100g without shells.
  • 80g (⅓ cup) apple butter
  • 5g (1 tsp) vanilla extract
  • 120g (½ cup) buttermilk

Brown Sugar Streusel

  • 75g (⅔ cup) all-purpose flour
  • 75g (⅓ cup packed) light brown sugar
  • 3g (1 tsp) ground cinnamon
  • 1g (⅛ tsp) fine salt
  • 70g (5 tbsp) cold unsalted butter, cubed
  • 40g (⅓ cup) toasted pecans or walnuts, chopped — Optional.

Cinnamon Glaze

  • 90g (¾ cup) powdered sugar
  • 1g (½ tsp) ground cinnamon
  • 2g (½ tsp) vanilla extract
  • 15-25g (1-1½ tbsp) milk or heavy cream — Add only enough to make a thick drizzle.

Pro tip: Dice the apples about ¼ inch. Bigger pieces release more juice and can leave wet pockets in the center of the loaf.

Method

Prepare the Pan, Apples, and Streusel (About 15 minutes)

Get the high-moisture pieces ready first, then keep the streusel cold so it stays crumbly in the oven.

  1. Heat the Oven and Line the Pan. Heat the oven to 350°F (175°C). Grease a 9 x 5-inch loaf pan and line it with parchment, leaving enough overhang to lift the loaf out later.
  2. Coat the Apples. Toss the diced apples with brown sugar, cinnamon, flour, and lemon juice until evenly coated. Set aside.
  3. Make the Streusel. Mix the flour, brown sugar, cinnamon, and salt. Rub or cut in the cold butter until you have crumbs ranging from small bits to pea-size pieces. Fold in the nuts if using. Refrigerate while you make the batter.

Tip: You want streusel chunks, not sand. Cold butter and uneven crumbs give you the crisp top.

Mix the Apple Bread Batter

Cream the butter and sugars first, then add the flour gently so the finished loaf stays tender.

  1. Whisk the Dry Ingredients. Whisk the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until evenly distributed.
  2. Cream the Butter and Sugars. Beat the softened butter, brown sugar, and granulated sugar for 2-3 minutes, until lighter in color and fluffy.
  3. Add the Eggs and Apple Butter. Beat in the eggs one at a time. Mix in the apple butter and vanilla until smooth.
  4. Finish the Batter. Add one-third of the dry mixture, then half the buttermilk. Repeat, finishing with the remaining dry mixture. Mix only until the flour disappears.
  5. Fold In Most of the Apples. Fold about two-thirds of the cinnamon apples into the batter. Use as few strokes as possible.

Tip: Once the flour goes in, stop chasing a perfectly smooth batter. Overmixing makes quick bread tough.

Layer and Top the Loaf

Layering the remaining apples through the center gives visible fruit without overloading one spot.

  1. Add the First Layer. Spread half the batter evenly in the prepared pan.
  2. Add the Remaining Apples. Scatter the remaining cinnamon apples over the batter in an even layer.
  3. Cover and Add Streusel. Spread the remaining batter over the apples. Sprinkle the cold streusel evenly over the top. Do not press it down.

Tip: Keep the streusel loose. Pressing it down turns it into a cap instead of crisp crumbs.

Bake, Cool, and Glaze

The loaf is finished when the center is fully set, not simply when the top looks brown.

  1. Bake. Bake at 350°F (175°C) for 55-70 minutes. If the streusel is deeply browned before the center is done, loosely tent the loaf with foil.
  2. Check the Center. The center should register 200-205°F (93-96°C). A tester should come out with moist crumbs but no wet batter.
  3. Cool Completely. Cool in the pan for 15 minutes, then lift the loaf onto a wire rack. Let it cool completely before glazing or slicing.
  4. Make the Cinnamon Glaze. Whisk the powdered sugar, cinnamon, vanilla, and 15g of milk or cream. Add more liquid a little at a time until the glaze falls in a thick ribbon.
  5. Glaze and Set. Drizzle the glaze over the completely cooled loaf. Let it set for about 15 minutes before slicing.

Tip: Do not slice this loaf hot. The fruit-heavy crumb needs cooling time to finish setting.

Bake Until the Center Is Set

The streusel can look finished before the apple-rich center is ready, so use internal temperature as your final check.

Oven: 175°C / 350°F. Internal temperature when done: 93-96°C / 200-205°F.

  1. Preheat. Preheat fully to 350°F (175°C).
  2. Bake. Bake 55-70 minutes.
  3. Protect the Top. Tent loosely with foil if the streusel is dark before the center is done.
  4. Check. Bake until the center reaches 200-205°F (93-96°C).
  5. Cool. Cool 15 minutes in the pan, then completely on a wire rack before glazing.

Note: For this loaf, the thermometer is more reliable than color. Aim for 200-205°F (93-96°C) in the center.

Storage

  • Room temperature: Store tightly covered at room temperature for up to 2 days.
  • Refrigerated: Store covered for up to 5 days. Bring slices to room temperature or warm gently before serving.
  • Frozen: Freeze the unglazed loaf or individual slices, well wrapped, for up to 2 months.
  • Refresh: Warm a slice in a 300°F (150°C) oven for 6-8 minutes, or serve at room temperature.

Cool the loaf completely before wrapping so trapped steam does not soften the streusel.

Frequently Asked Questions

Why is my apple bread wet or gummy in the center?

The most common causes are apple pieces that are too large, too much apple juice collecting in one layer, underbaking, or slicing while the loaf is still hot. Dice the apples about ¼ inch, coat them with the flour in the recipe, and bake until the center reaches 200-205°F (93-96°C).

What apples work best?

Use a firm apple that holds its shape, such as Honeycrisp, Pink Lady, Granny Smith, or Braeburn. Very soft apples can break down and add more moisture to the crumb.

Can I leave off the glaze?

Yes. The loaf is fully flavored without it. The glaze adds sweetness and a finished bakery-style look, but it is optional.
